I don't know how to answer this question. There are a lot of fast stock cars out there. Old and new cars can be fast and some are not. One way to find out is you are gonna have to do the hard work which is have a few cars and test, test and more testing down your drag strip. I hope this helps and don't forget to have FUN!
I think what is called the "silver" line of stock cars are the fastest from my personal experience. Right now the Fast & Furious Challenger and the neon speeders Ford GT are the fastest currently available cars of my collection. That said, any model off the shelf can have slight defects so there is no gurauntee. Buy some an have fun!

Here's a few. The 2 in back are Ultra Hots. I'm not saying they're the fastest but they're good.

Funny cars are always a good place to start for all out stock performance. Other than that, almost anything metal-on-metal with prime wheels & axles is a potential candidate.
However, there is one casting from the past 30yrs that some regard as the absolute fastest. It's the Tiger Wheels 1996 Porsche 911 GT1 which was one of the last releases from the Puerto Rican company. They only made 3000 units in White and 1500 units in Metallic Silver. They were fast enough to become almost immediately outlawed on the long downhill tracks of Puerto Rico. I'd love the opportunity to find out for myself but most examples fetch well into the 3 figure range...way too rich for my blood(and wallet).
The Ultra Hots (80's) Sol-Aire has held the top spot in my Top 26 for years now...just had a Way 2 Fast FTE work it's way to #2, but couldn't dethrone the Sol-Aire.
Bought the 2020 Mustang Shelby GT500 60th anniversary it beats my darkhorse and the darkhorse has been graphite the Shelby hasn't
